A couple of years ago I bought a brand new POTJIE and tried seasoning it the old school way, by cooking pig fat in it for several hours. The results were not as good as I had hoped and after the potjie had been standing in my green house for almost a year it got pretty rusty. So I jumped on the net and found some very helpful info on how to season it properly. By far the best source of info has been THIS website. Basically the trick is to make sure that it is completely dry by heating it up, then coating it with pure organic flax oil, and heating it past the oil's smoke point. She says to do it 6 times - I'm on my second time, but after the first time it is already MUCH better than before. My oven isn't big enough for my potjie, so I did it by heating it upside down on the gas hob - works perfectly.
